I am an Assistant Professor in the Department of Nutrition and Food Science of the Faculty of Veterinary Medicine of the Complutense University of Madrid (UCM) since October 2022. I graduated in Biochemistry at the Universidad Autónoma de Madrid (UAM) and have a Master's in Food Engineering Applied to Health from the Universidad Politécnica de Madrid (UPM). After receiving an FPI scholarship (MINECO, BES-2015-072191), I completed my doctoral thesis at the Instituto de Investigación en Ciencias de la Alimentación (CIAL, CSIC-UAM) and obtained a PhD in Food Sciences from the Universidad Autónoma de Madrid (UAM) in 2019.
