Abstract

Abstract In this doctoral thesis two cells for the measurement of volumetri c and acoustic properties in liquid under pressure have been designed and built. The volumetric cell is able to measure volume increments due to pressure and/or temperature in a pressure range from 0.1 MPa to 350 MPa and in a temperature range from 2 33.16 K to 353.16 K. In the other hand, the acoustic cell is able to measure the sound velocity in a sample between 0.1 MPa and 700 MPa, in a temperature range from 233.16 K to 353.16 K. Using those cells, the following thermodynamic properties have been determined in tomato concentrate: specific volume, sound velocity, isothermal compressibility coefficient, isobaric heat specific, thermal expansion coefficient and isentropic compressibility coefficient, all of them in the pressure range from
