Resum
We used molecular information from 27 polymorphisms located in 21 genes associated with economic traits as are milk production and its composition, growth, marbling, sensorial traits as are tenderness, juiciness, and coat colour useful for traceability, in order to evaluate production characteristics of the Pasiega breed. We found the presence of alleles B and E at the CSN3 locus which denote a good cheese ability; the predominance of allele T at the RORC locus associated with marbling and the possibility of selecting favourable genotypes at genes as CAST and VIM (for tenderness), PPARG (type of fatty acid), AANAT, PGAM2 or ME3 (underlying senso- rial traits) as a way to improve meat quality.
