Abstract

The Doctoral Thesis «The existing relations between art and gastronomy. The case of Andoni Luis Aduriz and Mugaritz» has as its main objective to reveal whether gastronomy has recently acquired the category of art and, if so, to what extent the thesis has been reflected in the creative cuisine of Andoni L.Aduriz. To provide further depth to the analysis, the thesis takes a historical journey through the evolution of art and gastronomy, displaying synergies between the two, starting in 1825, when the famous gastronome Jean Anthelme Brillat-Savarin proclaimed in his Physiology of Taste: «Tell me what you eat and I will tell you what you are». This ties together history with the present, shown by a contemporary quote by Andoni L. Aduriz: «We eat as we are».The thesis examines how gastronomy permeates the history of art, often in disguise, from cave paintings to Egyptian, Greek and Roman art over to the peak period of the artistic representation of food, found in the Baroque still life-painting after the creation of restaurants.
