Resumo

The use of enzymes as biocatalysts in the biotechnology industry represents a sustainable alternative to traditional chemical synthesis. In particular, the glycosyl hydrolases studied in this work participate in the modification of sugars and /or in the final deconstruction stages of large polysaccharides such as chitin, hemicellulose or starch, among others. This activity allows their use in the revaluation of waste residues from the agricultural sector or the seafood market, and its conversion into value-added products such as prebiotic oligosaccharides. In addition, other remarkable applications of glycosyl hydrolases are their lactose degrading capacity that could be used for the benefit of people who could not process it, the glycosylation of molecules with low solubility to increase their bioavailability and pharmacological applications, the reduction of polluting residues generated in the paper industry, and the production of biofuels...
