Abstract

The controls and legislation that currently guarantee food safety for consumers are constantly evolving and developing, always looking for new ways to detect fraudulent activities that may pose a risk to people’s health. This is due to the fact that these activities, which seek economic benefit without regard for the social damage they can cause, also search for new methods to evade these controls. The frauds committed mainly affect the composition of foods, leading to mixtures with exogenous agents, materials, or chemical products capable of causing, in the short or long term, damage to the end consumers of the product. Although not all frauds pose a risk to health, consumers demand that the quality of the products they acquire has high standards. In this manner, numerous frauds take place, leading to diminished qualities of the products on the market.
