Abstract

The objective of the present research was to study the effect of dietary fat type and administration time at different growing stages on broiler fat and meat quality characteristics trying to quantify the endogenous synthesis and look for quantitative relations in order to stablish the optimum switching time from a saturated fat to an insaturated and viceversa.In the first experiment, broilers received the following diets from 21 to 49 days of age: tallow (8%)(S), lard (8%)(M), sunflower oil (8%)(G), a mixture of tallow and lard (4%+4%)(Mz1), a mixture of lard and sunflower oil (4%+4%)(Mz2) and a mixture of tallow, lard and sunflower oil (2-2.8-3.2%)(Mz3). In the second experiment the following dietary programs were established: 1)TTT: tallow enriched-diet (8%) from 21 to 49 days; 2)SSS: sunflower oil-enriched diet (8%) from 21 to 49 days ; 3)STT: sunflower oil-enriched diet from 21 to 37 days and a tallow-enriched diet from 38 to 49 days; 4)SST: sunflower oil-enriched diet from 21 to 41 days and tallow-enriched from 42 to 49; 5)TSS: tallow-enriched diet from 21 to 37 and sunflower oil-enriched diet from 38 to 49.
