Abstract

The influence of cereal feed on chemical composition of flesh and fattyacids of fat reserves was measured in 54 Gigante de España rabbits. This rabbits were distributed in three uniform age and weight groups, in accordance with the basal regimen and the sort of cereal, barley, corn and wheat respectively. The results obtained by sensorial analysis of the Longissimus dorsi muscle and perirenal fat, complemented with biochemical analysis of the nitrogenated and lipid fractions, show statistically significant differences in fatty acid composition as well as fat quality. The results suggest that hind quarter is an estimator of the tissular composition of the carcass.
