Resumen

The chapter aims to (1) describe the international regulatory framework of functional foods, (2) review the state of the art regarding the nutrition and health-related claims approved to be used in the labeling, advertisement and/or presentation of functional foods, and (3) discuss the case-study of different functional foods.The classification of functional foods as well as the functional ingredients to be added and the food claims which can be shown in its labeling, presentation and/or advertisement differ from country to country. However, the national regulatory framework of nutrition and health claims is more similar among countries as a great majority of the regions has been adopted the premises established in the Official Guidelines for use of nutrition and health claims approved by the CODEX Alimentarius. However, it is still necessary an international regulation on the specific allergens and/or substances that can cause an intolerance in the human organism, in order to protect consumers health.
