Abstract

The interest in reaching an optimal state of health by adopting and following a varied and balanced diet, characterized by a predominance of foods of plant origin, has increasede specially in recent years. Beyond satisfying hunger and nutritional needs, consumers demand food products that promote health, better well-being and quality of life, as well as to achieve an adequate organism function and prevent the onset of diseases. In the frontier “food – pharma” are functional foods and food supplements, which contain nutrients and bioactive compounds with significant beneficial effects on health.
