Doctor by the Universidad Autónoma de Madrid with the thesis Digestión gastrointestinal de proteínas alimentarias y mecanismos de acción de péptidos con efecto sobre la salud digestiva / gastrointestinal digestion of food proteins and mechanisms of action of peptides on digestive health 2016. Supervised by Dr. Blanca Hernández Ledesma, Dr. Isidra Recio.
Degree in Veterinary with Honors from Complutense University of Madrid (UCM, 2011) and MSc in this institution at the Department of Nutrition, Bromatology and Food Technology (2012). PhD in Biology and Food Science on the gastrointestinal digestion of food proteins, dietary bioactive peptides, and their effects on the digestive health, at the Institute of Food Science Research (CIAL, CSIC-UAM, 2012-2016) and granted by a competitive PhD fellowship from the Spanish Ministry of Economy and Competitiveness. PhD internships (ICTAN-CSIC, URJC, IdiPAZ, and EEZ-CSIC from Spain; and University of Massachusetts from the USA, granted by the International Mobility FPI-Program). Postdoctoral stage at the Health Research Institute of Hospital University La Princesa in the Inflammatory Bowel Disease Unit, granted by the competitive Sara Borrell postdoctoral fellowship (Instituto de Salud Carlos III, 2017-2021). Participation in more than 20 competitive research projects (1 as PI), and contribution to more than 50 national or international conferences. Accredited as Assistant Professor and Associate Professor by The National Agency for Quality Assessment and Accreditation of Spain (ANECA). In November 2021, incorporation to the Department of Nutrition and Food Science (Faculty of Pharmacy, UCM), as Assistant Professor. Teaching responsibilities at UCM in the Pharmacy, Food Science and Technology, and Human Nutrition and Dietetics degrees, as well as in the Dual degree Pharmacy-Human Nutrition and Dietetics (more than 800 certified hours). Multidisciplinary research activity mainly focused on food-derived bioactive compounds at the gastrointestinal level, and summarized in 34 JCR articles (28 Q1; 17 as first author; 6 as corresponding author) and 6 book chapters.
